Château Dassault 2021 Magnum gives this Saint-Émilion a more generous sense of occasion. It is the same wine as the standard bottle, presented here in a 1.5 litre magnum, a format that naturally feels at home at a considered dinner table or in a cellar built around classic Bordeaux.The wine comes from Château Dassault, a Saint-Émilion Grand Cru Classé estate acquired by Marcel Dassault in 1955 and classified in 1969. The 2021 vintage is Merlot-led, with Cabernet Franc and Cabernet Sauvignon adding structure and detail. The grapes come from the northern slopes of Saint-Émilion, on clay, sand and clay-over-sand soils, harvested by hand and carefully sorted.
Its production reflects a precise, parcel-by-parcel approach: small temperature-controlled concrete vats, some integral vinification in oak barrels, and maturation for 12 to 16 months in a combination of new barriques, vats and amphorae. Rather than presenting Saint-Émilion through sheer weight, the 2021 vintage is described through freshness, definition and a more slender structure.
