Ouzo from Greece has become synonymous worldwide with the traditional Greek anise liqueur that has been enjoyed for generations as part of Greek food culture. Although there are many different producers and local distillers, ouzo is generally made according to an age-old principle: the base is neutral alcohol that is flavored with anise and sometimes with other herbs such as fennel or coriander. This drink is often served neat or with some water because of its pronounced anise aroma, resulting in the characteristic milky effect. Since 1989, ouzo has enjoyed Protected Geographical Indication status within the European Union, which means that only ouzo produced in Greece or on the Greek island of Lesbos may be called as such. Greek ouzo does not have a fixed flavor standard, allowing each brand or distillery to add its own unique recipe and refinement. The tradition of drinking ouzo still plays a major role at social occasions and while sharing meze, the typical Greek small dishes.
