The 37.5 cl demi bottle makes it a practical choice when you want a smaller format for cheese, dessert or a quiet tasting moment.Its character is shaped by Hoenshof's work with sweet and sour cherries. The producer lists Cordia, Griotte du Nord and Noordkriek, picked separately and fermented apart. After 24 hours of maceration, fermentation continues for 4 to 6 weeks before being stopped by cooling and filtration. The separate cherry wines are then blended, keeping the fruit at the heart of the wine while adding freshness and depth.
