Château Dassault 2022 Demi is a 37.5 cl half bottle of red Saint-Émilion Grand Cru from France, produced by a château with Grand Cru Classé status. The smaller format is a very useful one when you want to open a serious Bordeaux without committing to a full bottle.The wine is Merlot-led, with Cabernet Franc and Cabernet Sauvignon completing the blend. Its fruit comes from the northern slope of Saint-Émilion, where sandy and clay soils sit over a limestone-based subsoil. For the 2022 vintage, the integration of the neighbouring classified vineyard Faurie de Souchard is an important estate-specific detail.
Château Dassault works with manual harvesting, sorting, parcel-by-parcel vinification and gravity movement in the cellar. Ageing takes place in a combination of vessels including barriques, foudres, vats, amphorae and used barriques, with around 60% new oak mentioned. The amphorae are especially interesting here, as they are used to help preserve fruit character and texture without making the oak influence too dominant.
