It comes from Wijndomein Hoenshof in Borgloon, in the Haspengouw fruit-growing region of Belgian Limburg. Rather than being a grape wine with pear-like notes, this is a wine made from pear fruit itself.The pears mentioned for this cuvée include Durondeau, Doyenné and Beurré Hardy. They are frozen and then pressed, concentrating the juice in a way that follows the idea behind ice wine: sweetness, depth and retained freshness. Fermentation is controlled and stopped once the desired level of residual sugar has been reached.
