Horse With No Name takes bourbon whiskey in a direction that immediately catches the attention: a craft bourbon base from Texas, infused with 2% habanero distillate from the Black Forest. The idea is not to make a fiercely hot drink. According to the tasting notes, the habanero adds a floral aromatic layer without sharp heat.The bourbon itself is built from Texas yellow dent corn, soft red winter wheat and six-row malt, using a yeast strain captured from Texas pecans. Fermentation lasts 3 to 5 days, followed by double distillation in a column still and at least three years of maturation in 200-litre American oak casks with a #3 char.
The habanero element is treated with similar care. It is produced through traditional flavour extraction, with maceration in molasses-based alcohol, then matured for several months in earthenware tanks. About HORSE WITH NO NAME
The Horse's Spirit Company has set itself the goal of making one plus one more than two. They bring together two worlds: that of American bourbon and their own expertise in distilling. They are based in the Black Forest in Germany. The base is bourbon whiskey, currently still obtained via Pernod Ricard, but in the long term they will use their own distillates from a collaboration with Firestone and Robertson Distillery in Texas. They blend this bourbon with a distillate of habanero peppers, locally made in Germany. They use the Red Savina, a variëty of habanero that is larger, spicier and more powerful in flavor.
