Chateau Pichon Baron 2021 Demi is the half-bottle format of the Grand Vin of Château Pichon Baron from Pauillac. The 37.5 cl indication refers to the bottle size, not to a separate cuvée, so this is the same Grand Vin in a smaller format.This is a Left Bank Bordeaux from a property classified as a 2nd Grand Cru Classé in 1855. The 2021 blend is led very firmly by cabernet sauvignon, with 88% cabernet sauvignon and 12% merlot. The fruit comes from the oldest vines on the estate's historic parcels, with the Butte de Pichon Baron forming an important part of the Grand Vin.
Vinification was carried out parcel by parcel in wooden and stainless-steel vats. After malolactic fermentation in vat, the wine matured for 18 months, using 70% new barrels and 30% barrels that had held one previous wine. The result is described as a classic Pauillac expression: structured, precise and fresh, with dark fruit, floral detail, graphite-like minerality and firm yet polished tannins.

Located in the Pauillac appellation, on the left bank of the Gironde, it belongs to the so-called Deuxièmes Crus according to the famous 1855 classification, indicating that it has long been among the higher ranks of Bordeaux wineries. Château Pichon Baron mainly focuses on producing red wines in which cabernet sauvignon often dominates, usually complemented by merlot and small amounts of other grape varieties such as cabernet franc and petit verdot. The style of the wines is often described as powerful and structured, with the potential to age for a long time in the bottle.
