Rather than placing new oak at the centre of the wine, St Henri is built around fruit, structure and the character of its South Australian origins, with grapes sourced from Barossa Valley and McLaren Vale. It sits within the Penfolds Collection as a deliberately different expression of Shiraz.The 2021 blend is 97% Shiraz with 3% Cabernet Sauvignon, matured for 12 months in large, seasoned oak vats. That choice keeps the oak influence restrained and allows the depth of the Shiraz to speak more clearly. The result is a wine with concentration and ageing potential, but without the style being driven by new wood.
