That higher, cooler setting is an important part of the wine's identity and helps explain its lively, aromatic style.Made entirely from Aragonês, the grapes are hand-picked and carefully handled at the estate. The winemaking focuses on freshness rather than heavy extraction: gentle pressing, cool fermentation in stainless steel and a deliberate effort to preserve the purity of the fruit. A modest 15% of the final blend spends six months in third-use barrels, adding structure without pushing the oak to the foreground.
