Product info about Daftmill Winter Release 2011

Daftmill Winter Release 2011 is a single malt with a very direct farm-to-glass story. The Publican barley for this release was grown on a 43-acre field and harvested on 28 and 29 August 2009. It was then dried and stored on the farm before being malted in Alloa in the summer of 2010. That sense of origin is an important part of the whisky's identity.

The whisky for this bottling came from 27 first fill bourbon barrels, filled in December 2011 and matured under the roof of Daftmill's dunnage warehouse until bottling in 2024. Rather than feeling like a broad house style, this release is tied to a specific crop, a defined selection of casks and a long, patient maturation.

At Drankenshop Broekmans, we see this as a Daftmill for drinkers who enjoy detail: not only in the glass, but in the story behind it. Its floral, fruity and gently spiced profile, with no peat influence, keeps the focus on clarity, barley character and the development from those bourbon barrels.

The aroma brings citrus fruit, summer flowers, honey and a waxy note. On the palate, barley sugars and honey sit alongside home-grown fruit, while bitter citrus, spice and wood add definition.

Ginger and spice give the whisky a lively edge. The finish is medium to long, returning to citrus fruit with lemon, lime and grapefruit standing out clearly.

About DAFTMILL

Daftmill is a new Lowland distillery that is unique in many respects. It is one of the smallest Scottish distilleries (barely 20,000 liters and 100 casks per year!), actually a unique side project of owner and active farmer Francis Cuthbert. Together with his brother Ian, they started this project in 2005. A 100% pure farm distillery using only barley from their own land, made possible by a genuine passion for whisky, this is ÉÄúcraftÉÄÏ in the purest sense of the word. The first release was only recently launched ÉÄì you read that correctly, this inaugural release is immediately 12 years old. These marketing-averse brothers focus purely on quality; it is precisely this combination of top quality and anti-marketing that has already given Daftmill cult status.

Frequently asked questions

What kind of whisky is Daftmill Winter Release 2011?

Daftmill Winter Release 2011 is a single malt whisky.

The word 'single' causes some confusion for many. A single malt is nothing more and nothing less than a product from a single distillery. So it has nothing to do with a single cask or even casks of the same age.

Single malt whisky is made from malted barley and distilled in the famous copper pot stills, the distinctive copper stills.

Is Daftmill Winter Release 2011 a no age statement whisky (NAS)?

No, Daftmill Winter Release 2011 is not a no age statement (NAS) whisky. The label explicitly states an age and that age represents the youngest whisky found in the bottle (or in the blend).

Is Daftmill Winter Release 2011 a single cask whisky?

No, Daftmill Winter Release 2011 is not a single cask whisky.

Is Daftmill Winter Release 2011 a whisky at cask strength?

No, Daftmill Winter Release 2011 is not whisky at cask strength.

Is Daftmill Winter Release 2011 suitable to give as a gift?

Although this Daftmill Winter Release 2011 is not or does not have explicit gift packaging, it can certainly make an excellent gift. Gift packs are usually taken as a safe choice of gift because brands often combine the most accessible or their most popular whisky combine with a fun accessory in a nice gift pack. But if you are looking for a gift for an experienced whisky-drinker they may not be waiting for yet another glass and then this one Daftmill Winter Release 2011 might even be a better choice than such a gift pack.

Is Daftmill Winter Release 2011 a whisky to invest in?

Daftmill Winter Release 2011 is a whisky of Daftmill that was referred to by us as a Collector'swhisky. That is, we believe they have the most potential to increase in value over time.

Whether that will actually happen we obviously cannot predict. We therefore always advise never to invest or speculate in whisky that you would never want to drink yourself out of.

Is Daftmill Winter Release 2011 een goede keuze voor mij?

This Daftmill Winter Release 2011 can be a whisky one that suits you if you like a whisky with a floral character. Indeed, this florality is quite emphatic in the flavour profile.

However, we recommend that you also look at the rest of the flavour profile, as this florality is of course only one part of the overall character of this whisky.

Is Daftmill Winter Release 2011 a tarred whisky?

No, there is no peat in the flavour profile in this Daftmill Winter Release 2011 whisky . The absence of any smokiness therefore makes it suitable for those who do not like a peat flavour.

Is Daftmill Winter Release 2011 a spicy whisky?

Yes, Daftmill Winter Release 2011 is a whisky with a fairly spicy flavour profile: the spiciness of this whisky will be discernible right from the first sip from your glass.

The spiciness of a spirit can come about in different ways.

  • In whisky, the spicy notes mainly arise during the maturation process in wooden casks. The type of wood used (e.g. American oak, European oak) and whether the casks have been used before (e.g. sherry casks) have a big influence on the spiciness of the whisky that comes out of them.
  • With rum, the spicy notes can also come from the barrels used, but in addition there is also a separate class of "Spiced rum" where extra spices are added.
  • Gin has a much shorter production cycle and therefore does not usually get its spiciness from wood. Spicy notes in a gin are usually the direct result of the botanicals used to "colour" the gin and give it its own identity.
Is Daftmill Winter Release 2011 a fruity whisky?

Yes, Daftmill Winter Release 2011 is a whisky with a moderately fruity flavour profile: the fruitiness of this whisky will be discernible right from the first sip from your glass.

  • Whiskies with a fruity character can range from light and fresh apple notes to deep, ripe stone fruit and exotic aromas. This fruitiness can come from the grains, yeast and fermentation used, the shape of the pot stills and the cask type.
  • Rum made from sugar cane or molasses lends itself ideally to fruity notes. From the fresh citrus aromas of a white rum to the deep pineapple and banana notes of an aged variety - fruitiness is an essential characteristic in many rums. Again, the same factors affect fruitiness as with whisky.
Do you drink Daftmill Winter Release 2011 pure or with ice?

Whether you drink this Daftmill Winter Release 2011 whisky best with or without ice is a personal choice. We have always chosen not to take a stance on adding water or ice to whisky. There are certainly good reasons to add a little water to your whisky, but whether it adds value to you or detracts from your enjoyment is something you should mainly discover for yourself.

Does Daftmill Winter Release 2011 have a high alcohol content?

The alcohol content of this Daftmill Winter Release 2011 is higher than what you would expect from an average whisky expect. While not extremely exceptional, a whisky of around 46% is somewhat rarer anyway. Most whisky is usually closer to 40%.

Is Daftmill Winter Release 2011 an independent bottling?

No, Daftmill Winter Release 2011 is an official bottling of Daftmill.

Is Daftmill Winter Release 2011 suitable for an Irish Coffee?

To make an Irish Coffee according to the rules of the art, you need an Irish whiskey. Since you are going to mix it with coffee and whipped cream, we recommend using a good, but not overpriced whiskey. This Daftmill Winter Release 2011 is a whiskey, but because this whiskey comes from Scotland it is not the best choice to make a "real" Irish Coffee.

Did you know that the first Irish Coffee was invented in 1942 by bartender Joe Sheridan? He was working at the airport in Foynes, in the west of Ireland. The barman saw some tired passengers and figured they needed coffee with something special. To perk them up, he poured them coffee with a dash of whiskey mixed in and some coffee on top. When asked if it was Brazilian coffee, Sheridon replied, "No, my friend, this is Irish Coffee." And so it was.

According to the data currently available to us, we cannot state with certainty that this product is vegan and this claim is not explicitly made by the brand.

Is Daftmill Winter Release 2011 a biological whisky?

How do I get started on Scotch whisky?

Many people assume that a more expensive bottle of Scotch whisky is automatically better. It sounds logical: the higher the price, the better the quality. But in reality, the difference between a bottle of a few tens and one worth thousands of euros is rarely purely in the taste. What you pay has much more to do with age, scarcity, marketing and reputation than with what you actually taste in your glass.

To understand this properly, it helps to look at Scotch in different "levels". Each level tells you something about what you are drinking and, more importantly, what you are paying for, but not every epicurean goes through all these levels.

You can read all about it in our blog post Why an expensive Scotch doesn't necessarily taste better - the different levels of Scotch.
