Flavour notes
Ceres 2021 shows the fresher, more supple side of red Bordeaux, with a clear fruit-led expression. Ripe plum, red and preserved cherry, strawberry, redcurrant and raspberry come through, joined by a note of candied orange peel. The palate is lean and lively rather than heavily extracted, with supple tannins and bright acidity. A mineral undertone adds definition, and the finish returns to raspberry with a lemon-like freshness.

Product info about Ceres 2021
Ceres 2021 is a red Haut-Médoc with a distinct identity alongside the Pauillac wines of Château Haut-Bages Libéral. Officially referred to as Ceres de Haut-Bages Libéral 2021, it comes from an 8-hectare vineyard in Vertheuil, north of Pauillac, planted on clay-limestone soil. The wine is made entirely from Merlot, with an emphasis on freshness, suppleness and a direct expression of fruit rather than weight. What makes this cuvée particularly interesting is the thinking behind the vineyard. The producer describes organic and biodynamic farming, Demeter grapes, cover crops and around 1000 planted trees to encourage biodiversity and soil life. Even the label, designed by artist and landscape architect François Houtin, reflects that approach: a vine climbing into a tree, a visual reference to the agroforestry work behind Ceres. The name itself refers to the Roman goddess of agriculture and fertility.
The winemaking follows the same restrained line. Ceres 2021 is vinified without added sulphites and matured for 6 months in raw concrete vats, a choice aimed at preserving fruit and freshness. There is no confirmed oak influence shaping the flavour; instead, the wine presents a dry, still red Bordeaux with a leaner, livelier feel and a mineral undertone from its limestone-rich origin.
At Drankenshop Broekmans, this is the kind of Bordeaux we like to introduce to customers who want to see a different side of the Haut-Médoc: still rooted in the region, but with a more natural and fruit-driven interpretation. The 2021 vintage was challenging, and the volume for this cuvée was roughly halved compared with 2020. With around 14,000 bottles produced and the last bottles now available, it is a wine to approach with attention. The producer recommends serving it at 16 to 17°C, with about two hours in a carafe before tasting.
