About MING RIVER
Just like its homeland China, baijiu encompasses a whole contingent of flavors, traditions and stories. The term baijiu (pronounced as bei-dschio'u) is a category name that includes all traditional Chinese grain-based eau-de-vie. Bai (pronounced as baj) means white, Jiu (pronounced as dzjoe) means alcohol. Baijiu is usually distilled from sorghum, but rice, wheat, corn or millet are also used. The different types of baijiu can be as distinct in flavor as whisky and tequila. Unlike Western distilled spirits, baijiu is distilled according to the solid state distillation model, using traditional Chinese pot stills. These let steam pass directly through fermented grain to produce alcohol vapors. Ming River is a traditional Baijiu from Sichuan that enchants with its balance and complexity. The spirit is based on a regional red sorghum and water from a protected spring near the distillery.
