About MING RIVER

Net als zijn geboorteland China, omvat baijiu een heel contingent aan smaken, tradities en verhalen. De term baijiu (uitgesproken als bei-dschio'u) is een categorienaam die alle traditionele Chinese eau-de-vie van graan omvat. Bai (uitgesproken als baj) betekent wit, Jiu (uitgesproken als dzjoe) betekent alcohol. Baijiu wordt gewoonlijk gedistilleerd uit sorghum, maar rijst, tarwe, maïs of gierst worden ook gebruikt. De verschillende soorten baijiu kunnen qua smaak even verschillend zijn als whisky en tequila. In tegenstelling tot westerse gedistilleerde dranken worden baijiu gedestilleerd volgens het "solid state distillation" model, met gebruikmaking van traditionele Chinese distilleerkolven. Deze laten stoom rechtstreeks door gegist graan stromen om alcoholdampen te produceren. Ming River is een traditionele Baijiu uit Sichuan die bekoort door zijn evenwicht en complexiteit. De spirit is gebaseerd op een regionale rode sorghum en water uit een beschermde bron in de buurt van de distilleerderij.
