Product info about Valdespino Cardenal Palo Cortado Vors 50cl
Valdespino Cardenal Palo Cortado VORS is a very old, dry sherry from Jerez de la Frontera, made for slow tasting rather than casual pouring. Under sherry regulations, VORS indicates a certified average age of more than 30 years; for Cardenal, Valdespino itself states an average age of over 50 years. That long maturation is central to the identity of the wine.Its origin is clearly defined. Cardenal is made from 100% Palomino Fino and is linked to the Macharnudo Alto vineyard, a Jerez pago with albariza soil and old vines of around 50 years. It begins with a short period of biological ageing, then develops mainly through oxidative ageing in the criaderas and solera system. The structure consists of four criaderas and one solera, with only seven botas available for this wine.
What makes this Palo Cortado so compelling is the tension between finesse and concentration: the refined, amontillado-like side of the style, deepened by very long oxidative maturation. At Drankenshop Broekmans, we see it as a serious gastronomic sherry, well placed alongside smoked dishes, nuts, mature cheeses and rich gelatinous meat dishes. Served lightly chilled in small measures, it also works beautifully as a contemplative glass on its own.
The name Cardenal refers to Valdespino's late 19th-century exports to Ireland for Cardinal de Salis, a sherry lover. Cardenal was the second brand name registered by Valdespino, on 8 January 1894. That sense of history feels very much in keeping with a wine whose oldest soleras date back to the end of the 19th century.

About VALDESPINO
The first seeds of Bodegas Valdespino were sown in 1264, when Don Alfonso Valdespino received an estate in Jerez de la Frontera from King Alonso for his help in the fight against the Moors. In the meantime, Valdespino has become a purveyor to, among others, the Spanish and Swedish royal families. The Macharnudo Alto vineyard, which is 56.2 hectares in size, is planted with the Palomino Fino grape, which is also used for the Palo Cortado Viejo. This makes Valdespino the only one in Jerez that produces Single Vineyard Sherrys. The white soil is called albariza and is very rich in lime. The harvest is manual. The Palo Cortado Viejo C.P. has an average age of more than 25 years! C.P. in the name refers to the street where the solera of this sherry was originally located.
