Pouilly-Fumé Argile À Silex 2021 from Domaine Bouchie-Chatellier is a white Loire wine shaped very clearly by its place of origin. The cuvée comes from Saint-Andelain, from higher slopes rich in clay and flint, a terroir the domaine links with minerality, structure and ageing potential.The grape is Blanc Fumé, the local name for Sauvignon Blanc. The vineyards sit on slopes running down towards the Loire, with southern and western exposure. The domaine describes careful hand selection of the harvest, both in the vineyard and when filling the press, followed by gravity-led vinification and bottling in an underground, temperature-controlled cellar.
