Product info about Valdespino Pedro Ximenez El Candado
Valdespino Pedro Ximenez El Candado is a sweet sherry from Jerez de la Frontera, made from 100% Pedro Ximenez. It belongs firmly to the dessert wine side of sherry: dark, concentrated and built around the richness of sun-dried grapes.According to the product specifications, the Pedro Ximenez grapes come from Montilla-Moriles, a warmer and drier area inland from Jerez. After harvest they undergo the traditional asoleo process, drying in the sun, including on esparto grass mats. This concentrates the sugars, acidity and flavour compounds before pressing, slow fermentation and fortification to 17% alcohol.
The name El Candado means the padlock, a reference to its origin in two selected casks once kept under lock as a family reserve. The wine is then aged oxidatively in old American oak casks within Valdespino's solera and criadera system. About VALDESPINO
The first seeds of Bodegas Valdespino were sown in 1264, when Don Alfonso Valdespino was granted an estate in Jerez de la Frontera by King Alonso for his help in the struggle against the Moors. In the meantime, Valdespino has become a purveyor to, among others, the Spanish and Swedish royal families. The Pedro Ximenez grapes are hand-harvested and sun-dried until they are almost raisins. This gives El Candado its lush sweetness. The sherry then matures on average for more than 10 years under oxidative aging. El Candado has an intense mahogany color with aromas of dried fruit (raisins and figs) and subtle notes of roasted coffee beans, mocha, and sweet licorice. Velvety soft in taste with a long, silky finish. El Candado owes its name to the Spanish word for "padlock", and each bottle was sealed with one.
