Hakutsuru Umeshu shows a distinctly Japanese side of plum. Made with Japanese ume plums, it is built around a sweet yet gently tart fruit character, with ripe plum notes and a subtle impression of plum stone.

Gentle extraction in stainless steel and maturation partly in used French oak give the wine shape and subtle depth rather than an obvious new-oak (…)
